Indian /Nepalese Specialist Chef Full time, permanent position Salary:  £30,000.00 PER YEAR plus Incentives Closing date for applications: 12th July  2017     An Indian & Nepalese Cuisine in Ruislip Middlesex is looking for dynamic high calibre  Indian and Nepalese chef, who has high-level skills in both Nepalese & Indian dishes including Tandoor and other Nepalese specialities. Ability to prepare and cook large scale cooking for groups and parties an essential quality   The ideal candidate needs to demonstrate a passion for the hospitality industry and provide timely service of meals to the highest standards.You will be working in a busy environment which requires consistency in quality, flexibility and ability to work well under pressure.   Key Functions General To monitor and maintain consistent food standards and quality across all areas during all stages of production and supply. To assist in the implementation of the HACCP procedures according to the company’s Food Safety Management system. To maintain the correct use of the KRB including cleaning rota and other practices and procedures. Ensure quality control measures, and hygiene systems are in placeEstablish and maintain accountability procedures during food productionEstablish food budget, cost controls measures, ensuring minimum wastageActively participate in the ongoing management and planning of menus.Maintain a weekly stock take system (inc. rotation)  take in conjunction Documentation and safe storage of all KRB paperworkAll menus are costed accuratelyAdopt a rigorous inspection regime about supplies and suppliers   Knowledge about cook-chilled system and chilling blast system is essential   Knowledge of correct use of combi oven is necessary   Ensure relevant hygiene and health and safety standards are maintained   Liaise with suppliers and  deal with the best rate and value of the products   Source high-quality ingredients on a seasonal basis and negotiate the best rates and deals with all the suppliers of goods and services   Able to communicate with all relevant third parties like staff agencies, suppliers hire & purchase companies.     Maintenance ·         To maintain all equipment through due care and diligence as instructed. ·         To notify the Catering Manager regarding engineer call outs for all repairs on catering equipment, unless otherwise instructed.   Staff Management & Cooperation ·         Supervise junior staff, organise Duty Rota and day off, and instructing casual hired kitchen staff including hired chef and other catering staff(for events & catering)   JOB DESCRIPTION and PERSONAL SPECIFICATION ·         Actively participate in the annual Training Days. ·         Participate in the weekly staff meetings ·         Participate in the identification of training needs of all staff ·         Undertake staff briefings with team members at the start of their working day. ·         Labour tracking sheets are compiled daily and within budget ·         Time sheets are signed off and submitted to payroll on time ·         Development of Job descriptions ·         Monitoring  and mark ·         Monitor new kitchen  staff  and conduct trials during  recruitment process   Food Safety & Health and Safety ·         Ensure the company’s Health and Safety Policy is fully implemented ·         To understand and have a working knowledge of all current Health and Safety legislation and Food Hygiene legislation ·         Ensure cleaning is carried out as per the cleaning rota and effectively ·         Ensure day dotting is carried out as per HACCP ·         Arrange COSHH training as required ·         Ensure all junior staff  trained to Basic food hygiene level as a minimum   Other Duties and Responsibilities ·         Undertake training and development as appropriate and keep appraised of developments ·         Ability to carry out other duties as appropriate and as requested by the General Manager ·         This job description is current at the commencement of employment. In consultation with you, it is subject to variation by management to reflect or anticipate changes in, or to the job. ·         Liaise direct with key customer contacts and attend review meetings giving presentations when so ·         Customer complaints and feedback with explanations to the General Manager ·         Ensure measures are in place to ensure food and premises security ·         Ensure sufficient PPEs are available for all the team ·         Ensure regular reading of trade press for innovative ideas ·         Take every opportunity to discuss ideas with management and obtain constructive feedback. Desirable ·         NVQ Qualification 1,2,3 ·         Experience in contract catering in a busy, large-scale operation ·         Previous kitchen budget control experience ·         Theatre restaurant experience ·         Training staff in group sessions or on a 121 basis ·       Evidence of cost controls Skills & Qualification: The applicant should be experienced to NVQ3 equivalent or minimum of 5 years experience in a busy catering establishment.
